Butchery Manager / Blockman - Restaurant Group - Cape Town A well-known restaurant group based in Cape Town is seeking a dynamic and experienced Butchery Manager / Blockman to oversee operations for two of their restaurants.Responsibilities:-Daily Butchery Operations-Oversee all butchery activities, including cutting, portioning, deboning, and preparing meat for service.-Stock Control & Ordering-Quality Control-Team Management-Supervise, train, and mentor butchery staff to ensure efficiency and consistency.-Cost Management-Compliance-Collaboration-Work closely with Head Chefs and Restaurant Managers to understand menu requirements and ensure supply meets demand.Requirements:-Minimum 3–5 years’ experience as a blockman or butchery manager, preferably in a restaurant or hospitality setting.-Strong Knife Skills-Experience in managing a small team and working independently.-Knowledge of Meat Cuts-In-depth understanding of beef, lamb, poultry, and game cuts — including dry-aged and premium products.-Hygiene & Safety-Solid knowledge of food safety, HACCP, and hygiene standards.-Organizational SkillsSalary: R15,000 – R20,000 per monthSchedule: 6 shifts per week, 9am–4pm
